Ingredients
- 4 medium green bell peppers (about 1 1/2 pounds)
- 1 tablespoon extra-virgin olive oil
- 4 slices deli ham (about 3 ounces), cut in half (I use Black Forest ham)
- 1/2 cup shredded sharp Cheddar (about 2 ounces)
- 1 plum tomato (about 4 ounces), finely chopped (about 1/2 cup)
- 1 scallion, white and green parts finely chopped
- 6 large eggs
- Kosher salt and freshly ground black pepper
