- 2 bay leaves
- 1½ teaspoons dried oregano

- 1 tablespoon cornmeal
- 1 tablespoon vegetable oil
- 2 pounds boneless, skinless chicken breasts, chopped into ¼-inch pieces
- One 28-ounce can whole tomatoes, chopped
- 1½ to 2 cups low-sodium chicken broth
- One 19-ounce can white beans, drained and rinsed
- Cooked brown rice, shredded Cheddar cheese, sour cream, and chopped onion, for serving
