- 1 1/4 cups grated parmesan cheese
- 1 large leek, or 2 medium
- 2 eggs
- 2 teaspoons black pepper
- 1 teaspoon salt
- 1/4 cup butter + 1 tablespoon
- 2 cups polenta corn meal
- 1/2 cup panko
- 1/2 cup breadcrumbs
- vegetable oil
- fried sage for garnish
