Ingredients
- 3-4 pieces uncured bacon
- 2 cups diced new potatoes, skin on
- 1 chopped sweet onion
- 1 diced sweet red pepper
- 1 bunch kale, hand torn from stem into small shreds
- 1 cup chopped mushrooms
- 1 cup diced tomatoes, salted and drained
- 1 cup grated cheese (I used Asiago and Cheddar from local Tucumcari Mountain Cheese Factory)
- 6 eggs (or, wipe out an entire dozen pullet eggs in one go!)
- 1/2 cup milk
- Salt, pepper, red pepper flakes to taste. I also use several generous grinds of Trader Joe's Everday Seasoning
