- 1/2 cup (125ml) lemon juice
- 1/4 cup sucanat (or sugar)
- 1 egg + 1 egg yolk
- 4 tablespoons unsalted butter, at room temperature
- 6 egg yolks
- 1 cup sugar
- 1/2 cup water
- 3 sticks unsalted butter, at room temperature
- 1/2 vanilla bean
