Roasted Roots Black Rice Figs
Ingredients
- 2-3 parsnips, roughly chopped
- 2-3 carrots, roughly chopped
- 1 large onion, roughly chopped
- 1 celeriac, peeled and roughly chopped
- 3 medium kohlrabi, stems removed, peeled and roughly chopped
- 4-5 stems fresh thyme
- 1 teaspoon salt
- olive oil
- 1 cup black rice, rinsed
- 2 1/4 cups water
- 1 bunch kale, destemmed and chopped
- 1/2 cup dried figs, diced
- Salt and black pepper, to taste
