Ingredients
- 1 tablespoon unsalted butter
- 1 tablespoon Olive Oil
- 1 pound large Carrots, Halved Lenghtwise diagonally and cut into 2 inch long pieces
- 4 Garlic cloves, unpeeled
- Salt & Pepper
- 2 tablespoons chicken stock
- 1/4 cup Crumbled Feta
- 2 teaspoons Parsley, chopped
- 2 teaspoons mint, chopped
