Ingredients
- 3 tbsp olive oil
- 1/2 red onion, chopped
- 1/2 green bell pepper, chopped
- 12 oz mushrooms, sliced
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/4 tsp freshly ground black pepper
- tsp ground red pepper
- 1 1/2 C short-or long-grain rice
- 2 1/2 C chicken or vegetable stock (we used Kitchen Basics)
- 1 1/2 C chopped tomatoes (from 26 oz box)
- 1 1/2 tsp salt
- 9 oz baby spinach, roughly chopped
- 1 C frozen peas
- 1 C frozen artichoke hearts (halves and quarters)
- 2 tbsp red wine vinegar
- 1/4 C chopped fresh parsley
