- 1/2 cup celery, medium dice

- 2 bay leaves
- 2 cups thick tomato sauce
- 1 cup turkey or chicken stock plus more as needed
- 1 tablespoon tomato paste
- 1/2 cup raisins
- 1 teaspoon light brown sugar
- 2 cups leftover turkey or chicken, shredded into bit sized pieces
- sea salt and fresh ground pepper
- 1/3 to 1/2 cups crushed salted dry roasted peanuts or butter fried almonds
