Chicken and Cecci Chili
Ingredients
- 2 tablespoons olive oil
- 2 pounds ground chicken (I prefer a blend of dark and white meat)
- 1 large yellow onion, chopped
- 1/4 cup aged balsamic vinegar
- 3 roasted red peppers, jarred or homemade
- 2 tablespoons rosemary, finely chopped
- 2 tablespoons fresh thyme, chopped
- 1 bay leaf
- 1/4 teaspoon ground cinnamon, or one whole cinnamon stick
- 2 cloves garlic, minced
- 1 15 ounce can of chickpeas, drained and rinsed
- 4 cups chicken broth or stock
- 1/2 - 2/3 cups grated Pecorino cheese
- 1/2 cup ricotta cheese
- zest of one lemon
- 2 Carrots, peeled & finely diced
- 1 tablespoon Chili powder
