- 2 green Thai chiles, stems removed
- 4 thin-cut bone-in pork chops (about 1½ lb. total)
- Kosher salt, freshly ground pepper
- 2 Tbsp. vegetable oil
- Juice of 2 limes
- ¼ cup coarsely chopped cilantro
- 2 Tbsp. (or more) fish sauce
- 1 tsp. sugar
- Cooked white rice (for serving)
