• 8 shallots, peeled and sliced
• 2 medium carrots, peeled and sliced into 1" × 1⁄4" sticks
• 1⁄4 lb. french beans, trimmed and cut into 1" segments
• 2 tsp. salt
• 2 medium tomatoes, chopped
• 1⁄2 tsp. ground turmeric
• 1 tbsp. fresh lemon juice
• 1-2 tbsp. ghee or butter
