Maple Espresso Baked Oatmeal
Ingredients
- 2 1/2 cups rolled oats (I use Bob's Red Mill)
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1 tablespoon powdered instant espresso
- 2 ounces unsalted butter (1/2 stick)
- 2/3 cup grade B maple syrup
- 3 eggs, room temperature
- 2/3 cup whole milk
- 1 cup chopped pecans
- 3/4 cup dried cherries, roughly chopped if they're very large
