- 1/4 cup mayo
- 3 tablespoons celery, chopped
- 2 tablespoons scallions, chopped
- 2 tablespoons red bell pepper, chopped
- 1 tablespoon fresh dill, chopped
- 1 tablespoon flat-leaved parsley, chopped
- 4 teaspoons Meyer lemon juice (or any lemon juice), divided use
- 1/4 teaspoon celery salt
- 1/4 teaspoon ground white pepper
- 1/2 pound small shrimp, cleaned, cooked, peeled and chilled for 1/2 hour
- 2 ripe avocados, peeled, pitted and halved
- 2 cups organic baby greens
- chopped fresh dill and grated Meyer lemon zest (optional garnishes)
