- 3/4 cup canola oil
- 1/4 cup minced peeled fresh ginger
- 4 garlic cloves, thinly sliced
- 1 tablespoon crab paste (see Note)
- 1 teaspoon Thai chile paste or sambal oelek
- 1/2 pound shiitake mushrooms, stems discarded and caps thinly sliced (4 cups)
- 1 cup vegetable broth
- 1/2 pound jumbo lump crabmeat, picked over
- 1/4 cup chopped mint, plus small leaves for garnish
- 1 teaspoon finely grated lime zest plus 3 tablespoons fresh lime juice
