- 1 (15.5 oz.) can black-eyed peas, drained & rinsed
- ½ tsp. crushed red chile flakes
- Salt
- Freshly ground black pepper
- 1 c. + 2 tbs. white cornmeal
- ¾ c. + ½ tbs. flour
- 1½ tbs. baking powder
- 1 tsp. sugar
- ¾ tsp. salt
- 2 large eggs, lightly beaten
- 1½ c. buttermilk
