Ingredients
- 4 tablespoons unsalted butter, divided
- 4 slices sourdough bread, crusts removed, torn or cut into 1/2-inch cubes (or smaller)
- 6 slices thick-cut bacon, cut into lardons
- 1 butternut squash (about 2 pounds), peeled, seeds removed, sliced into 1/2 to 1/3-inch cubes
- Kosher salt, to taste
- 1 teaspoon freshly ground black pepper, plus more to taste
- 16 ounces fun-shaped pasta (like rigatoni, bowtie, or shells)
- 4 tablespoons all-purpose flour
- 1 cup Hood® Heavy Cream
- 3 1/2 cups Hood® Whole Milk
- 3 1/2 cups sharp yellow cheddar, grated and divided (white cheddar also works nicely here, too)
- 2 cups Gruyère, grated and divided
- 1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon cayenne pepper, or to taste
