Roasted Cauliflower and Almond Risotto
Ingredients
- 1 head of cauliflower
- 5 cloves of garlic
- 3 tablespoons grapeseed oil
- 1/2 teaspoon sea salt
- 4 cups vegetable broth
- 1 large shallot, minced
- 1/8th cups sliced or slivered almonds
- 4 -6 sprigs sage, chopped
- 1 cup arborio rice
- 1/4 cup dry white wine, I used a buttery chardonay
- 1/3 cup vegan or regular parmesan cheese
- 1 splash lemon juice
