- 1 tbsp vegetable oil
- 1 smoked bacon rasher
- 2 carrots , roughly chopped
- 1 leek , roughly sliced
- 2 celery sticks, roughly chopped
- 1 onion , roughly chopped
- 1 garlic bulb, halved
- 1 thyme sprig
- 250ml fresh chicken stock
