Vegan Sweet Potato Malai Kofta
Ingredients
- For the koftas
- 1 large sweet potato
- 1/4 cup Firm tofu, crumbled by hand
- 1/4-1/2 cups Chickpea flour
- 2 tablespoons chopped cilantro + extra for serving
- 1 tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon kosher salt
- 1 garlic clove, grated
- 1 teaspoon grated or finely minced ginger
- 2 tablespoons coconut oil
- For the coconut gravy
- 2 small, or 1 large onion, finely chopped
- 4 cloves finely minced garlic
- 2 tablespoons finely minced ginger
- 2 heaping tablespoons tomato paste
- 1 tablespoon curry powder
- 1 can coconut milk
- 2 teaspoons rice wine vinegar
- 1 tablespoon coconut palm sugar, or dark brown sugar, in a pinch
