- 1 poblano (pasilla) pepper, seeded and finely diced
- Salt to taste
- 4 scallions, thinly sliced
- 2-3 garlic cloves, minced
- 1 large egg
- 1 pound ground chicken
- 9-10 oz Mexican (soft) chorizo, removed from packaging or casing
- 1 cup finely crushed tortilla chips
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt (if using unsalted chips, increase to 1 tsp)
