Shrimp and Pineapple Fried Rice
Ingredients
- 2 1/2 tablespoons canola oil, divided
- 3 garlic cloves, minced (about 1 Tbsp)
- 1 tablespoon finely minced ginger
- 1/4 cup scallions, chopped (white and light green parts only)
- 1 cup uncooked rice
- 1 cup water
- 1/2 pound shrimp, peeled and deveined
- 1/2 small pineapple, peeled, cored, and cut into small pieces
- 1 red pepper, seeded and cut into quarters
- 1/2 tablespoon sesame oil
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1/2 cup chopped scallions (dark green parts only)
- 1/3 cup edamame
- toasted sesame seeds for garnish
