- 1½ tbsp. rice wine
- 1 tbsp. sesame oil
- 2 tsp. sugar
- FOR THE RICE:
- 6 cups cooked rice, at room temperature
- 5 tbsp. peanut oil
- 5 eggs, beaten with ¼ tsp. kosher salt
- ¾ cup finely chopped country ham
- 5 scallions, thinly sliced diagonally
