- 200g plain flour, plus extra for dusting
- 60g pecorino romano, parmesan (or use a mixture), or vegetarian alternative, finely grated
- 1 whole nutmeg, for grating
- 2 egg yolks (freeze the whites for another recipe)
- 30g unsalted butter
