- 1/2 cup plus 1 tablespoon cold butter, finely diced
- 1 large free-range egg
- 4 cups strawberries, halved or quartered if large
- 2 teaspoons lemon zest, finely grated
- 2 tablespoons fresh thyme leaves, roughly chopped
- 2 tablespoons pure maple syrup
- 1/2 cup almond flour, to sprinkle
