- 7 cups chopped squash and zucchini (1/4-1/3″ pieces)
- ½ large onion, chopped
- 1 1/2 cups corn (frozen, fresh or canned)
- 2 tablespoons olive oil
- ½ cup roasted green chiles
- ½ teaspoon garlic powder
- 1 teaspoon oregano
- ½ teaspoon red chili powder (optional)
- Salt and pepper to taste
- Optional toppings: sour cream and shredded cheese (omit for vegan dish)
