Ingredients
- 2 cup steel cut oats (I use Bob's Red Mill brand)
- 2 cup milk (whole or 2%)
- 1 tablespoon melted butter
- 1-1 1/2 cup blueberries (or any berry you like)
- 1 large egg
- 3/4 cup unsweetened applesauce
- 1/4 cup Muscovado sugar (you can substitute other sugar, honey or maple syrup)
- 2 teaspoon baking powder
- 1 teaspoon vanilla exract
- 2 teaspoon cinnamon
- 1/4 teaspoon fresh ground nutmeg
- 1/2 teaspoon cardamom
- 1/2 teaspoon salt
- 1/4 cup unsweetened coconut (toast if you wish)
- Toasted nuts (almonds, pecans, and walnuts) as a topping
- yogurt as a topping
