Savory Breakfast Cake
Ingredients
- 5 garlic cloves, pressed or minced
- 1/2 medium onion, minced
- 4 ounces cremini mushrooms, small dice
- 4 - 8 spears of asparagus, small dice
- 18 ounces butter beans (or other white beans), home-cooked or two (2) 15-oz cans drained and rinsed
- 4 eggs
- 3.5 ounces almond flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt, plus more for seasoning veg
- 50 grams avocado oil (or olive oil, or coconut oil melted), plus more for cooking veg
- a few dollops of hot pepper sauce for the top (e.g., I used Trader Joe's "Bomba" Calabrian Pepper Sauce)
