Harvest Breakfast Muffins
Ingredients
- 3 cups All purpose white flour
- 1 teaspoon Baking Soda
- 1 teaspoon Table Salt
- 1/2 teaspoon Pumpkin Pie Spice
- 1/2 teaspoon Ground cinnamon
- 1-3/4 cups Granulated sugar
- 1 cup Canola oil (or vegetable oil)
- 2 Large eggs (room temperature)
- 1 cup Granny Smith apple shredded
- 1 cup Zucchini shredded
- 1 cup Carrot shredded (equals approx. 2 large carrots)
- 1 cup Chopped Nuts (almonds or pecans)
