Chicken Stew with Beans Corn and Plantains
Ingredients
- 2 tablespoons olive oil
- 2 boneless, skinless chicken breasts, cut into cubes
- 2 medium sized carrotes, peeled and chopped small
- 1 medium-sized onion, peeled and chopped small
- 2 large roma tomatoes, chopped (can sub with 12 oz can chopped tomatoes)
- 4 cloves garlic, minced
- 1 (12 oz) can kidney beans, drained and rinsed with cold water
- 1 bay leaf
- 1 tablespoon ground cumin
- 1 teaspoon ancho chile powder
- 1/2 teaspoon dried oregano
- 1/4 teaspoon ground cinnamon
- salt and pepper to taste
- 1/2 cup corn kernals (frozen is fine)
- 3 tablespoons fresh cilantro, roughly chopped
- 4 cups chicken broth
- fresh lime for garnish
