- 3 chicken carcasses, plus 6 chicken drumsticks
- 2.5 litres/4 pints 8fl oz water
- 3 carrots, peeled, chopped
- 2 celery stalks, trimmed, chopped
- 1 large leek, trimmed, sliced
- 2 large onions, peeled, chopped
- 2 fresh bay leaves
- 1 small bunch fresh thyme
- 1 tsp black peppercorns
- 1 tsp salt flakes
- 150g/5oz rice noodles
- 1 tbsp chopped fresh parsley
- 1-2 tbsp chopped fresh chives, to serve
