Zucchini Cilantro Soup
Ingredients
- 4 pounds organic zucchini, trimmed but not peeled, seeds removed
- 1/4 cup olive oil
- 1 1/2 cups chopped onion
- 4-6 garlic cloves, chopped
- 1 quart low-sodium chicken broth
- 1/4 cup packed cilantro leaves
- 1 tablespoon salt
- Freshly ground black pepper
- 1-2 tablespoons white wine vinegar
- Sour cream or Crème Fraîche to serve
