- 3 cups Shell Pasta (the Larger Shells)
- 2 Tablespoons Olive Oil
- 2 cups Cremini Or Baby Bella Mushrooms, Sliced
- Sea Salt And Ground Black Pepper To Taste
- 1 Tablespoon Butter (heaping Tablespoon)
- 1 Tablespoon All-purpose Flour
- 1 cup Milk
- 8 ounces, weight Smoked Gouda, Grated
- 8 ounces, weight Creamy Havarti, Grated
- ⅓ cups Lager Beer (I Used A Honey Brown Lager)
