- 4 large ripe plum tomatoes

- drizzle of extra virgin olive oil
- 6-8 slices Parma ham
- large handful rocket
- 2 x 125g/4½ oz fresh mozzarella balls
- 2 tbsp capers, rinsed
- olive oil, for drizzling
