  • Cajun Meat Loaf Sauce
  • 1 box Pomi crushed tomatoes, about 14 ounces
  • 2 Bay Leaves
  • 1 tablespoon salt
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cumin
  • 1/2 teaspoon sugar
  • Meat Loaf
  • 4 tablespoons olive oil
  • 3/4 cup finely chopped onion
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped bell pepper
  • 1/4 cup chopped scallions (which are called green onions in the original recipe--that's what they're called in Cajun cooking.)
  • 2 cloves garlic, minced or put through a garlic press
  • 3-5 drops Tabasco (up to a teaspoon if you like things really hot)
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup milk
  • 1/2 cup ketchup
  • 1 1/2 pounds lean ground beef
  • 1/2 pound ground pork (you can use all beef if you prefer.)
  • 2 eggs, lightly beaten
  • 1 cup fresh bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
