Ingredients
- Cajun Meat Loaf Sauce
- 1 box Pomi crushed tomatoes, about 14 ounces
- 2 Bay Leaves
- 1 tablespoon salt
- 1/2 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cumin
- 1/2 teaspoon sugar
- Meat Loaf
- 4 tablespoons olive oil
- 3/4 cup finely chopped onion
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped bell pepper
- 1/4 cup chopped scallions (which are called green onions in the original recipe--that's what they're called in Cajun cooking.)
- 2 cloves garlic, minced or put through a garlic press
- 3-5 drops Tabasco (up to a teaspoon if you like things really hot)
- 1 tablespoon Worcestershire sauce
- 1/2 cup milk
- 1/2 cup ketchup
- 1 1/2 pounds lean ground beef
- 1/2 pound ground pork (you can use all beef if you prefer.)
- 2 eggs, lightly beaten
- 1 cup fresh bread crumbs
- 1 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
