Aamer Morobba Indian Mango Preserve
Ingredients
- 8 mangoes (I prefer Ataulfo), cut into 1" long slices
- 1 tablespoon very finely minced ginger
- 4 Serrano peppers, seeded and finely minced
- 1 cup water
- 2 cups white sugar (use less if mangoes are very sweet)
- 2 cinnamon sticks
- 5 cardamom pods, slightly crushed
- 2 tablespoons lemon juice
- 1/2 teaspoon white vinegar
- 1 pinch kosher salt
