- 4 ounces sliced bacon or pork back fat
- 1 clove of garlic, crushed
- 6 black peppercorns, crushed
- 6 juniper berries, crushed
- 1 to 2 teaspoon salt
- 1/4 teaspoon ground mace
- 3 to 4 tablespoons dry white wine
- 2 tablespoons brandy
