Pan Fried Bacon Scallion Cheddar and Potato Wontons with Herb Dip
Ingredients
- For the wontons
- 1 pound peeled Yukon Gold potatoes
- 4 pieces uncooked bacon
- 2 tablespoons sour cream
- 1 tablespoon butter
- 1 tablespoon bacon fat (when frying bacon strips, reserve the rendered fat)
- 1-2 tablespoons milk
- 1 1/2 tablespoons finely minced scallions
- 1 cup grated cheddar cheese
- 40 wonton wrappers
- Salt and pepper to taste
- Vegetable oil for frying
- For the herb dip
- 3/4 cup sour cream
- 2 1/2 tablespoons minced fresh dill
- 2 teaspoons minced scallions
