Ingredients
- 1 lb Potatoes (your favorite- I used Yukon Gold) cut lengthwise into 1/4-inch-thick slices
- 2 cup White Vinegar
- 2 tbsp extra-virgin olive oil
- 1 1/2 tsp coarse salt, plus more for sprinkling
- 1/4 tsp freshly ground pepper
- 3/4 cup Yogurt plain, low-fat
- 3/4 cup Extra Virgin Olive Oil
- 6 x garlic cloves, minced
- 1 tbsp Dried Thyme
- 1 tbsp Dried Oregano
- 1 1/2 tsp Salt
- 1 1/2 tsp Freshly ground black pepper
- 1/2 tsp cayenne pepper
- 6 x chicken breasts boneless, skinless, cut into 1-inch cubes
- 3 tbsp basil leaves,chopped
- 5 tbsp lemon juice,freshly squeezed
- 3 x Red Bell Peppers(large), stemmed and seeded and cut into 1-inch pieces
- 2 x onions red (large),peeled and cut into 1-inch pieces
