Creamy Roasted Cauliflower Soup
Ingredients
- 1 nice size head cauliflower, broken into 1 to 2 inch florets
- 1/4 cup extra virgin olive oil plus 2 more tablespoons
- Salt and pepper for seasoning the cauliflower
- 6 whole cloves garlic, skins left on
- 1 medium leek, cleaned and diced
- 2 tablespoons butter
- 6 cups chicken or vegetable broth
- 1/2 cup half and half
- 2 cups cups shredded cheese ( I used 1 1/2 cups Kasseri and 1/2 cup Parmesan but use whatever you like....Fontina, Jack Cheddar etc.)
- Croutons and parsley for garnish
