Ingredients
- For the Pulled Pork:
- 3 tablespoons light brown sugar
- 3 tablespoons paprika
- 2 tablespoons chili powder
- 1 teaspoon garlic powder
- 2 teaspoons freshly ground black pepper
- 2 teaspoons ground coriander
- 1 tablespoon kosher salt
- 2 large slabs (about 7 pounds) rib-on, skin-on pork belly, 2 inches thick (see Note)
- 5 to 6 cups wood chips, soaked in water for at least 30 minutes
- For the Sauce:
- 1 cup cider vinegar
- 1/4 cup light brown sugar, packed
- 2 tablespoons red pepper flakes
- 2 tablespoons hot sauce (such as Frank’s)
- 2 teaspoons kosher salt
- For the Coleslaw:
- 1 head green cabbage, cored and finely sliced or chopped (about 8 cups chopped)
- 1 medium red onion, finely sliced (about 1 cup)
- 1 large carrot, grated on large holes of box grater (about 1 cup)
- 1 tablespoon table salt, plus more to taste
- 6 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 3/4 cup mayonnaise
- 2 tablespoons granulated sugar
- 2 teaspoons freshly ground black pepper, plus more to taste
- To Serve:
- 8 to 10 soft buns
