Coconut Chicken Cocktail Meatballs
Ingredients
- For the meatballs
- 1 1/2 pounds ground chicken (combination of white and dark meat)
- 1 egg, lightly beaten
- 1/2 cup finely shredded unsweetened coconut
- 1 cup panko crumbs
- 2 tablespoons spicy chili garlic sauce (or sambal oelek)
- 1 teaspoon salt
- 2 teaspoons granulated sugar
- 2 medium green onions, thinly sliced
- For the sauce and putting it all together
- one 13 to 14 ounce can of coconut milk
- 1/2 cup light brown sugar (packed)
- 1 tablespoon spicy chili-garlic sauce
- 1/4 teaspoon salt
- Thinly sliced green onions for garnish
- The previously made meatball mixture.
