- 1 cup yogurt, drained in a cheesecloth-lined strainer or coffee filter for 2 to 4 hours, can substitute for 1 cup sour cream or creme fraiche
- 1/4 cup malt vinegar
- 1 lemon, juiced
- 8 cloves garlic, peeled and finely minced
- 1 [3-inch] piece fresh ginger, peeled and grated
- 1 tablespoon garam masala
- 1 tablespoon cumin, toasted
- 1 teaspoon ground cardamom
- 1/2 teaspoon cayenne pepper
- 1/4 teaspoon ground mace
- 1/4 teaspoon ground nutmeg
- 2 tablespoons canola oil
- 3 tablespoons unsalted butter, melted
