- 1/2 cup chopped Vidalia onions

- 1 clove garlic, minced
- 1 16-ounce can refried beans
- 6 to 8 pickled jalapeño slices, finely chopped, plus pickled jalapeño juice (optional)
- 8 6-inch corn tortillas
- Shredded monterey Jack, pico de gallo, chopped fresh cilantro, lime wedges and hot sauce, for serving
- Kosher salt and freshly cracked pepper
