- 1 large cucumber, peeled, seeded and diced (about 2 cups)
- 1/2 cup diced red onion
- 2 cups finely chopped fresh parsley leaves
- 1/3 cup finely chopped fresh mint leaves
- 3 tablespoons olive oil
- 1/4 cup lemon juice
- 1 teaspoon grated lemon zest
- 1 teaspoon ground cumin
- Salt and freshly ground black pepper
- 6 grilled chicken breasts as an accompaniment
