Ingredients
- One recipe Easy Pie Dough, one half shaped and chilled in a pie plate, the other rolled out flat and chilled on a floured sheet pan
- 3 pounds apples (recommend: Pippins or other tart baking apple), peeled, cored, and diced into 1/4 inch pieces
- 1 pound uncured bacon, cut into thick lardons
- 1/2 cup chopped prunes, pits removed
- 1/2 cup golden raisins
- 1/2 cup dried cherries
- 1/2 cup chopped figs
- 2 tablespoons light molasses
- 1/4 cup brandy
- 1/4 cup orange juice
- 1/4 cup butter
- Zest of 1 orange
- Zest of 1 lemon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- Pinch of salt
- Egg wash: 1 egg and 1 pinch of salt, beaten together
