Salt Cod Saffron Stew
Ingredients
- 450 grams Salt Cod (soaked in water for 24 hours prior with regular rinsing and water changes)
- 1 Large white onion
- 2 Bulbs Fennel
- 1/2 Fresh red chilli chopped
- 1 Bunch flat parsley
- 1/2 Bunch of thyme
- 1/2 Juice of Lemon
- 2 pinches Black Pepper
- 1/2 Bottle dry white wine
- 1/2 teaspoon saffron sepals
- 1kg New potatoes or Pink firs sliced in half
- 100 milliliters Extra Virgin Olive oil
