- 4 small or 2 large shallots, peeled and thinly sliced

- 1/2 teaspoon (heaping) finely chopped fresh rosemary
- 1/2 teaspoon (heaping) finely chopped fresh thyme

- 1 sweet potato, sliced into 1/8- to 1/4-inch thick rounds
