- 1 1/2 lbs. smoked sausage(i like the hot )
- 2 large onions, chopped
- 1/2 cup celery, chopped
- 1 bell pepper, chopped
- 1 large can tomatoes
- 2 bay leaves
- 1/2 tsp. basil
- 1/2 tsp. thyme
- 1/2 tsp cayenne
- 2-3 cloves garlic, chopped
- 1 10.5 oz. can beef consomme'
- 1 whole chicken, boiled, deboned and shredded
- 2 1/2 cups chicken broth
- 1 cup uncooked rice
- Salt. pepper, tobasco to taste
- 1/2 cup chopped green onions
- 4 tbsp. chopped parsley
