- 150g/5oz chocolate digestive biscuits, roughly broken
- 75g/3oz butter
- 375g/13oz caster sugar
- 4 tbsp cold water
- 150g/5oz white chocolate, broken into squares
- 600g/1lb 5oz full-fat cream cheese
- 150ml/5fl oz double cream
- 2 free-range egg yolks
- 4 free-range eggs
- 300ml/10fl oz double cream
